Adeodata Czink, president of The Business of Manners, says most of her clients are single and well off.

Czink specializes in international protocol. "North Americans are so ethno-centric. They don't realize other cultures do things differently."

Dining is fraught with cultural booby traps. While a North American may eat with one hand on his lap, a refined European would find it barbaric. Since the Middle Ages, says Czink, both hands on the table show you're unarmed.

Most etiquette practices are learned at home as children, but may need fine-tuning.
